Winter Berry & Orange Spiced Oat Pancakes

- 100 g rolled oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- Zest of 1 orange
- 1 egg
- 150 ml milk (dairy or oat)
- 1 tbsp honey or maple syrup
- 1 tsp olive oil or butter (for cooking)
- 100 g mixed frozen berries (raspberries, blackberries, blueberries, redcurrants)
- 2 tbsp Greek yoghurt (to serve)
- Extra honey or maple syrup for drizzling

Method

Blitz oats in a blender until they form a coarse flour.

Add baking powder, cinnamon, nutmeg, orange zest, egg, milk and honey. Blend until smooth.

Heat a little oil or butter in a non-stick pan over medium heat.

Pour small rounds of batter and cook 2–3 minutes on each side until golden.

In a small pan, warm the frozen berries with a teaspoon of honey for 2–3 minutes until soft and glossy.

Stack pancakes, top with yoghurt and a spoonful of warm berries, then drizzle with honey or syrup.
