All the comfort of a stack of pancakes baked in a single bowl. Soft and fluffy in the middle, golden on top and loaded with berries, yoghurt and peanut butter. No flipping required for this pancake bowl.
Serves: 1
Ingredients
- 40 grams rolled oats
- 1 small ripe banana
- 1 medium egg
- 25 grams vanilla whey protein powder
- 60 milliliters semi-skimmed milk
- 0.3 teaspoons baking powder
- 0.5 teaspoons ground cinnamon
- 60 grams blueberries
- 50 grams 0% fat Greek yoghurt
- 1 tablespoons smooth peanut butter
Steps
- Heat the oven: Heat the oven to 180°C (160°C fan). Lightly grease an oven-safe bowl or small ramekin, roughly 12 to 14cm across.
- Make the batter: Slice a few rounds from 1 small ripe banana and set them aside for the top. Add the rest of the banana to a blender with 40 grams rolled oats, 1 medium egg, 25 grams vanilla whey protein powder, 60 milliliters semi-skimmed milk, 0.3 teaspoons baking powder and 0.5 teaspoons ground cinnamon. Blitz until smooth, then rest it for a couple of minutes so the oats soften and the batter thickens.
- Add the berries: Pour the batter into the bowl and scatter over half of the 60 grams blueberries, pressing them in gently.
- Bake: Bake until risen and golden, and a skewer pushed into the middle comes out clean. It will still be soft and slightly custardy at the centre, which is exactly what you want.
- Top and serve: Leave it to cool for a minute, then top with 50 grams 0% fat Greek yoghurt, the rest of the blueberries, the reserved banana slices and a drizzle of 1 tablespoons smooth peanut butter. Warm the peanut butter for a few seconds first if it’s too thick to drizzle.
Notes
Microwave version: cook the batter in a microwave-safe mug or bowl for 2 to 3 minutes on high, checking every 30 seconds after the first 90 so it doesn’t turn rubbery. No blender? Use quick oats and mash the banana well with a fork. Dairy-free swaps: use oat milk, a plant protein powder and coconut yoghurt, though the protein will drop a little.

That’s a lot of protein for a breakfast that tastes like a treat. It comes from four sources working together: protein powder, egg, Greek yoghurt and peanut butter. The oats and banana keep you full until lunch.
Nearly all of the 25g of sugar is natural, from the banana, blueberries and milk. There’s no added sugar beyond the small amount in the protein powder.
