There are mornings when I know I won’t have time to stand around cooking.
On those days, I tend to make something the night before that I’ll actually want to eat when I wake up. Not something overly worthy or bland, but something that feels like a proper breakfast.
This one usually starts with yoghurt and oats.
I mix everything together in a jar the night before, nothing complicated, just a few ingredients that work well together. It takes a couple of minutes, then it goes straight into the fridge.
By morning, it’s ready.
The oats soften, the flavours come together and it feels like something that’s been properly made rather than thrown together in a rush.
It’s cold, creamy and filling enough to carry me through the morning without needing anything else.

Almond Butter and Berry Overnight Oats

- 40 g rolled oats
- 150 g Greek yoghurt
- 100 ml milk (any kind)
- one tbsp almond butter
- one tsp honey
- Handful mixed berries (fresh or frozen)
- one tbsp chia seeds
Instructions
Method
- Add oats, yoghurt, milk, almond butter, honey and chia seeds to a jar or bowl.
- Stir well until everything is combined.
- Fold in half the berries.
- Cover and refrigerate overnight.
- In the morning, top with the remaining berries and an extra drizzle of almond butter if you like.
