Recipe: Grilled Chicken Zoodle Bowl

Light, protein-rich and full of flavour.
This quick and colourful dish pairs juicy grilled chicken with garlicky courgette noodles, roasted cherry tomatoes and just the right amount of parmesan for bite. It’s dinner in under 30 – and it’s a good one.

Grilled Chicken Zoodle Bowl

Serves: 2
Cooking time: 20 mins minutes
Level: Easy

Ingredients

  • 2 skinless chicken breasts (150g each)
  • 2 tsp olive oil
  • Salt, pepper, crushed garlic to taste
  • 2 medium courgettes, spiralised or ribboned (~400g)
  • 200g cherry tomatoes, halved
  • 2 tsp olive oil (for roasting)
  • 30g shaved parmesan
  • Optional: fresh basil or lemon wedges

Instructions

Method

  1. Preheat oven to 200°C. Toss cherry tomatoes in olive oil, season and roast for 15–20 mins until soft and caramelised.

  2. Rub chicken breasts with olive oil, salt, pepper and crushed garlic. Grill or pan-fry over medium-high heat for 5–6 mins per side until cooked through. Rest, then slice.

  3. Lightly sauté courgette noodles in a dry pan for 1–2 mins until just tender.

  4. Divide zoodles between two bowls. Top with sliced chicken, roasted tomatoes and parmesan. Add fresh basil or a squeeze of lemon if you like.
