This quick and colourful dish pairs juicy grilled chicken with garlicky courgette noodles, roasted cherry tomatoes and just the right amount of parmesan for bite. It’s dinner in under 30 – and it’s a good one.
Grilled Chicken Zoodle Bowl

- 2 skinless chicken breasts (150g each)
- 2 tsp olive oil
- Salt, pepper, crushed garlic to taste
- 2 medium courgettes, spiralised or ribboned (~400g)
- 200g cherry tomatoes, halved
- 2 tsp olive oil (for roasting)
- 30g shaved parmesan
- Optional: fresh basil or lemon wedges

Preheat oven to 200°C. Toss cherry tomatoes in olive oil, season and roast for 15–20 mins until soft and caramelised.

Rub chicken breasts with olive oil, salt, pepper and crushed garlic. Grill or pan-fry over medium-high heat for 5–6 mins per side until cooked through. Rest, then slice.

Lightly sauté courgette noodles in a dry pan for 1–2 mins until just tender.

Divide zoodles between two bowls. Top with sliced chicken, roasted tomatoes and parmesan. Add fresh basil or a squeeze of lemon if you like.
